During their travels as a team, owners Jack Gilmore and Tom Kamm, Chief Culinary Officer Chris TenEyck, and Beverage Director David Toby, always make it a point to find the best breakfast joint wherever they are. The place that locals recommend, that makes them want to return to time and again, the place that makes their day start right – that’s how Day Maker was born.

Meet our Chefs
Executive Chef Forrest Briwa pairs Southern comfort and Cajun flavors with a dash of edgy energy at Day Maker Half Day Cafe. A true Austin native, Forrest’s culinary journey began in the fast-paced world of serving, where he discovered his passion for cooking from scratch and delivering high-quality dishes in record time. He fine-tuned his skills in Southern and Southwestern cuisine alongside Chefs Jack Gilmore and Chris Ten Eyck at Jack Allen’s Kitchen, then expanded his seafood expertise under Chef Tom Rummel at Salt Traders Coastal Cooking. Now, at Day Maker, Forrest combines precision and passion, ensuring every bite is memorable, delivered with speed and care. “I’m laid-back, except when it’s go time—that’s when the fire ignites, and it’s time to rock.”
Chief Culinary Officer Chris Ten Eyck brings his extensive experience and passion for seasonal, fresh, and flavorful ingredients to Day Maker’s menu. With years of experience at Z’Tejas, Jack Allen’s Kitchen, and Salt Traders Coastal Cooking, Chef Chris has honed his ability to create dishes that celebrate the best of Austin’s culinary scene. At Day Maker, his standout creations include Anita’s Churro Pancakes with Horchata Butter, a decadent twist on a brunch favorite, and the Chicken Schnitzel Caesar, which adds a crispy, flavorful spin to a classic salad. Chef Chris’s culinary philosophy is about showcasing distinct, crave-worthy flavors with comforting classics, infusing each dish with a creative twist.
The Art of Day Maker
Mike and Erin Johnston of Team TRUTH bring their creative spirit to Day Maker through vibrant murals that enhance the cafe’s lively atmosphere. Both with BFAs—Mike from Austin College and Erin from UT Austin (Hook ‘Em!) —they’ve spent over a decade infusing Austin with their artistic energy. Mike, an early street art evangelist, and Erin, a professional artist, have deeply connected with Day Maker’s welcoming team. As Mike shared, “This has been our favorite mural project ever due to the hospitality and warmth from everyone.” Their artwork embodies community, captures the unique spirit of Austin, and aims to uplift and inspire, contributing to a space that celebrates creativity and joy.
